Ingredients:
- 1 cup of chickpeas
- 3 cups of veggies chopped in small cubes (Onion, Green & Red Bell Pepper, Cucumber, Tomato, Spring Onion)
- Cilantro/ coriander leaves
- Feta Cheese or Cottage Cheese (Crumbled)
- 1 teaspoon cumin powder
- 1 teaspoon red chili powder
- 1 teaspoon Dried mint leaves
- Black Pepper
- Salt to taste
For Salad Dressing:
- 1/2 cup fresh mint leaves
- 1/2 cup chopped coriander
- 1/2 teaspoon sugar
- 2 tablespoon low-fat curd
- 1 tablespoon lemon juice
- Black Pepper
- Salt to taste
Method:
For Salad Dressing:
- Combine all the ingredients and about 1/2 cup of water in the blender and make a smooth paste.
- Store it in a refrigerator.
How to Proceed:
- Soak the chickpeas overnight in the water and then boil them in the pressure cooker till the 4 whistles.
- Drain the chickpeas and transfer them into a mixing bowl.
- Now add cumin powder, red chili powder, dried mint leaves, salt & pepper.
- Add in all the diced vegetables & cheese and toss to combine.
- Pour in salad dressing and toss some more to combine all the ingredients properly.
- Your chickpea salad is now ready. This super fresh summer recipe tastes really delicious.
Mango Shrikhand:
Summer is the season of mango, and one must definitely try some mango desserts to have a taste of summer throughout the year.
Ingredients:
- 3 cups of Curd/Yogurt
- 2 Mangoes (Chopped)
- 3-4 crushed green cardamon
- 1 pinch saffron strands
- 1 pinch turmeric powder
- Sugar as per taste
Method:
- Before starting the preparation, hung the curd in the muslin cloth for 3-4 hours.
- Now puree the mangos with the hand blender.
- Take out the think curd from the cloth and add mango puree, cardamom, saffron, turmeric, and sugar to it.
- Blend the mixture till it is smooth.
- Your delicious mango shrikhand is now ready- serve it with some puri or chug it plain.
Lemonade:
Lemonade is a staple summer drink that everyone loves to have on a hot sunny day. It is a great refreshing drink for parties.
Ingredients:
- 2 Cups of Lemon Juice
- 2 Cups of Water
- 2 Cups of Sugar
- 2 Teaspoon of Rock Salt
Method:
- Take a pan and add water & sugar and cook on medium heat until sugar is dissolved and the liquid looks clear again. Make sure to stir it continuously.
- Combine the lemon juice with sugar solution and add rock salt.
- The concentrated lemonade is ready, just add water to taste when you are ready to serve.
