Easy Gujarati Breakfast Recipe

1) Khaman Dhokla:
This tangy-sweet and spongy dish are utterly mouth-watering. It has a hit of spice because of the green chillies and the freshness from the coriander makes it extra special! These dhoklas are soaked in sweet and tangy syrup along with a tempering made with mustard seeds, curry leaves and green chillies.
Let's have a look at the ingredients and the method to make it.
Ingredients
- 1 ½ cup gram flour (besan)
- 1 ½ cup semolina (sooji)
- ½ tsp turmeric powder
- 4 tsp Sugar
- salt to taste
- 3 tbsp Oil
- 1 tsp Lemon Juice
- 1 tsp ginger-green chilli paste
- 1 tsp fruit salt
- 1 tsp mustard seeds
- 1 tsp sesame
- pinch of Vasant Masala's Supreme Asafoetida (hing)
- 5-6 curry leaves
- 1 tsp green chillies
Method:
- In a deep bowl, whisk together the besan, semolina, sugar, ginger-green chilli paste, turmeric powder, lemon juice, salt, and about 3⁄4 cup of water to produce a thick batter for the khaman dhokla.
- Add the fruit salt just before steaming, and stir gently.
- In a 175 mm (7") diameter oiled thali, immediately pour the mixture and spread it evenly by turning the thali in a clockwise direction.
- The dhoklas should be steamed for about 10 to 12 minutes in a steamer. Keep aside and cool it a little.
- In a tiny nonstick skillet, heat the oil before adding the mustard seeds.
- Sesame seeds, asafoetida, curry leaves, and green chillies should be added when the seeds begin to pop. This should be done on a medium burner for 30 seconds.
- Mix thoroughly after adding a half cup of water.
- Then uniformly pour the tempering over the dhoklas. Wait five minutes to ensure that all of the water has been absorbed.
- Khaman dhokla should be served right away with green chutney after being cut into pieces and garnished with coriander and coconut.
2) Masala Khakhra:
This dish is the easiest to pull off and requires very less ingredients. Khakhra is the one snack available at every Gujarati place. You can transform this snack into a healthy or low-calorie lunch by topping it with a delicious salad or use khakhra as a tortilla chip and your salad as 'Indian' salsa. Let's see how to make this!
Ingredients:
- 1 finely chopped onion
- 1 finely chopped tomato
- 1 finely chopped capsicum
- 1 finely chopped green chilli
- add protein of choice (lentils or sprouts)
- chopped coriander
- 1 tsp lemon juice
Method:
- Take a deep bowl. Add all the ingredients to that bowl.
- Mix everything well. Once well combined, top the khakhra with this mixture and enjoy!

3) Fafda:

Ingredients:
- 1 cup chickpea flour
- ¼ tsp carom seeds
- 1 tbsp black pepper
- ¼ tsp turmeric
- ⅛ tsp hing
- ⅛ tsp baking soda
- water as required
- 2 tbsp oil
- Salt to taste
- Oil for deep frying or as required
Method:
- Combine besan, carom seeds, black pepper, turmeric, hing, baking soda, and salt to taste in a bowl.
- Gradually incorporate water while kneading the mixture to a firm dough.
- Add the remaining oil once more and keep kneading.
- Keep kneading until all of the water has been absorbed.
- Give the dough 30 minutes to rest.
- Divide the dough into evenly spaced parts.
- Roll the dough out lengthwise onto a surface that has been greased.
- Heat the oil in a different pan, then fry the dough until it is golden brown.
- Dish out and savour!
