Ingredients:
For Gujarati Handvo Batter:
- 1 cup of rice
- 1/2 cup of chana dal
- 2 tbsp. urad dal
- 1/4th cup of toor dal
- 1 cup of curd
- 1 cup grated bottle gourd ( Lauki )
- 1/2 cup grated carrot
- 1/2 cup chopped onions
- A handful of chopped coriander leaves
- 1/4th cup of sweet corn
- 1 finely chopped green chilli
- 1/4th tsp. ginger paste
- 1/4th tsp. red chilli powder
- 1/4th tsp. turmeric powder
- 1/2 tsp. sugar
- 1/2 tsp. salt
- 2 tsp. oil
- 1/2 tsp. baking soda
For Gujarati Handvo Tempering:
- 1 tbsp. oil
- 1/2 tsp. mustard seeds
- 1 tsp. sesame seeds
- 4-5 curry leaves
Method:
For making the batter of Gujarati Handvo:
- Start by soaking in water 1 cup of rice in one container and 1/2 cup of chana dal, 2 tbsp urad dal, 1/4th cup of toor dal in the second container for around 4-5 hours.
- After they are soaked, drain the water and combine the rice and all the dals.
- Add 1 cup of curd into the above mixture and blend them, keep the paste smooth but a little grainy.
- Take the paste in a mixing bowl. Add bottle gourd, carrot, onion, coriander leaves, ginger paste, sweet corn and green chillies in it.
- Now add salt, turmeric powder and red chilli powder. Mix everything perfectly and stir it properly.
- Make sure that the batter is thick and consistent. Now at the time of making handvo add baking soda to it and mix it thoroughly.
- And finally, add oil to the batter.
- Your batter for handvo is ready.
For the making of Gujarati Handvo:
- Now take a deep non-stick pan and pour a spoon of oil in it.
- Now add curry leaves and Vasant Masala’s sesame seeds and mustard seeds in the pan.
- Let the seeds temper until they turn golden-brown.
- After the tempering, add the batter we have prepared.
- Slowly pour the batter into the pan by covering the whole bottom of the pan. Also pour some oil around the edges of the pan.
- Cover the pan with a lid and let the handvo cook on a low flame for 5 minutes.
- Keep a check on it so that it does not burn. Cook until the upper surface looks a little cooked and the bottom of handvo has turned dark brown.
- Now use a spatula and gently flip the side of the handvo in the pan and cook it for 4 minutes. Handvo should be fluffy, and its edges should be crunchy.
- And your handvo is ready now!!!
