These vendors have their twist to it; from filling to flavours, you get to experience the diversity of it on each stall. The fusion of cuisines adds to its unique way of eating it with chilly garlic chutney and mayonnaise.
Momos are available in delectable fusions and flavours. The fillings are corn cheese & mushroom, cottage cheese and spinach, mixed veg, chilli cheese garlic, and nonveg options are also available. These momos can also be deep-fried, pan-fried and can also be tandoori-fied, meaning to say that you can get to enjoy the tandoori version of momos also.

What are Tandoori Momos?
You must have heard tandoori roti, tandoori kabab, tandoori paneer, and tandoori mushroom. But you might have not heard of Tandoori Momos. Tandoori momos have the same cooking process as tandoori paneer. Momos are marinated in spicy and flavourful hung curd paste. A thin skewer is passed from the centre of the momo and then it is added to the hot tandoor. Once that is halfway cooked, it is generously coated with butter and then goes back to the tandoor. It sounds delicious, right?

Tandoori Momo Recipe
The best Veg Tandoori Momos recipe is given in this blog. If you prefer the non-veg version of tandoori momos you can alter one ingredient with chicken. However, this recipe is purely vegetarian and made with simple ingredients.
Ingredients
- 2tsp Ginger Garlic Paste
- 1tsp Finely Chopped Green chilli
- 1 cup Finely Chopped Cabbage
- 1 cup Finely Chopped Onion
- 1 cup Finely Chopped Capsicum
- 1 cup Finely Chopped Carrot
- 1/2 cup Finely CHopped Mushroom of Choice (Optional)
- Hand Full of Spring Onion Greens
- 1 tbsp Dark Soya Sauce
- 1 tbsp Chilli Sauce
- 1/2 tbsp Vinegar
- Salt and crushed black pepper to taste
For the marinate
- 1 cup Hung Curd
- 1tsp Chilli Powder
- 1/2 tsp Garam Masala
- 1/2 tsp ginger garlic paste
- 1/2 tsp lemon juice
- A pinch of salt
- pinch of red food colouring (Optional)
- Salt to Taste
- 1 tsp butter
For Garnishing
- Vasant Masala's Chaat Masala
- Butter
- Coriander
For Doug
- 1 1/2 cup All Purpose Flour (Maida)
- A pinch of salt
- 2 1/2 tsp oil
- 1/2 cup water
Recipe
- Start with making the dough. Incorporate all-purpose flour, salt and oil into a bowl. Now, mix well until you get a crumbly mixture.
- Now, gradually start adding water to your dough and knead until the dough comes together.
- Brush the dough with some more oil and let it sit until you prepare your filling.
- Take a pan, add oil and put it on medium-high flame. Add your Ginger garlic paste and chillies to it. Saute well and add in all your veggies.
- Keep in mind that you don't have to cook them till they get soft. They need to have that bite so saute for about 30 seconds and add in your wet ingredients (soy sauce, chilli sauce, vinegar). Quickly take your pan off the heat and transfer your filling to a plate.
- Let the mixture cool. Once the filling is cooled, add in salt and black pepper to taste; mix well.
- Now roll the dough into small and thin circular sheets.
- Place some filling in the centre of the small circular sheet and join the edges to get the desired shape.
- you can either form a semi-circle or the shape of a ball. Semi-circle momos are usually the easiest to make.
- Pro tip: Use some water to close the edges tightly.
Time For Tandoor!
- Tandoor is nothing else but your gas stove! After leaving your momos in the marinate for about 20 mins you can pass a skewer through the centre and roast on low flame from all sides on the gas.
- roast until you see black charred dots on the momos. When it gets a little dry, brush it with some butter and cook it on a medium flame for 2-3 more minutes.
- Take it off the skewer, and toss it in some butter. Sprinkle some chaat masala and coriander and your Veg Tandoori Momos are ready! Happy Eating!
