When you want to enjoy light snack for the evening with your family and friends, you can consider making Pani Puri also popularly known as puchka, golgappa in some parts of India. It is very easy to make and ingredients are also readily available in the market. The 3 basic things that overall makes the pani puri “the pani puri” is the puri, stuffing and the flavoured water or you can simply mix in Pani Puri masala into the water.
Let’s get started with the recipe,
Ingredients :
1 or 2 pack of Puri (sooji, rava or flour) or make it at home following these simple steps;
Method for making puris at home
Ingredients:
- ½ cup suji, semolina or rava
- ½ cup wheat flour(whole)
- 1 tsp maida or all-purpose flour
- ½ tsp baking soda
- drops of oil
- oil for deep frying
- salt
- Put all the ingredients into a bowl except oil and mix thoroughly
- Knead the mixture well, use cold water to make the dough sticky
- Knead the dough for around 7-8 minutes until you get an even texture
- Apply little oil on the dough and cover it, keep it aside for about 30-40 minutes
- After keeping it for 30-40 minutes, knead the dough again for 3-4 minutes
- Now take the dough, divide it into 2-3 parts and roll it into thin chapatti, keep the remaining dough aside and cover with a moist cloth
- Make small balls and start making puris or you can use a small bowl to make your puris similar in shape and size
- Fry the puris like you normally do while making normal puris
- Use a tissue to remove the excess oil from the puri
- Let it cool down and keep it into air-tight container to avoid puris getting soggy
Stuffing:
- 2 or more boiled, peeled and mashed potatoes
- 1 cup grams (3-4 hours soaked)
- 1tbsp chaat masala
- ½ red chilli powder
- salt to taste
Pani:
- ½ cup coriander Leaves
- 1 tsp black salt
- ½ tsp chaat masala
- 1 lemon juice
- 1 cup mint leaves
- 3-4 chillies
- Tamarind pulp
Recipe :
Stuffing:
Boil the potatoes inside the pressure cooker until it’s completely cooked, after its cooked peel it and mash it thoroughly. Likewise, boil the grams into a cooker pressure until cooked and keep it aside for a while. Now mix both the potato and the gram together along with other ingredients like chaat masala, red chilli powder, and salt to taste, you can also add spicy chutney into it if you want.
Pani:
Mix and blend all the ingredient i.e. black salt, chaat masala, jeeravan powder, lemon juice, 3 to 4 chillies, tamarind together. Pour the paste into the bowl and add 2-3 cups of water, add coriander for seasoning. Anyhow if you want to make it more flavourful then add in ginger, garlic, jeera, ajwain, lemon, pudina, etc.
Lastly, fill in the prepared stuffing into the puri, add in the spicy and tangy pani and enjoy tasteful, lip smacking Pani Puri at home with your friends and family!
